How have you bean? Bean Salad Recipe

Hey! How you bean? The days seem to be a little bit sunnier so time to roll out a salad recipe which is a complete meal.

INGREDIENTS (serves 4-5)

◘ 1 can Spiral Organic Red Kidney Beans, drained
◘ 1 can Spiral Organic Borlotti Beans, drained
◘ 1 organic avocado, ¼ sliced thinly, and dice the rest
◘ 1 organic Lebanese cucumber, diced
◘ ½ cup organic baby tomato, halved or quartered
◘ ¼ organic red onion, finely chopped
◘ 1 stalk of organic celery, cut into 1cm cubes
◘ ¼ cup of organic corn kernels
◘ ¼ cup chopped organic coriander
Dressing
◘ ½ cup Spiral Organic Extra Virgin Olive Oil
◘ ½ cup Spiral Organic Apple Cider Vinegar
◘ 1Tbsp Spiral Organic Maple Syrup
◘ 2 tsp Spiral Organic Wholegrain Mustard
◘ 1 tsp fresh minced garlic
◘ 1 tsp salt
◘ ½ tsp black pepper
METHOD

1. Mix all dressing ingredients in a jar or mixing bowl. Adjust to taste by adding salt, apple cider vinegar and black pepper. Set aside.
2. Combine the rest of the ingredients in a salad bowl, drizzle with the dressing and toss well.
3. Serve with organic leafy greens (such as spinach or cos lettuce) sliced avocado and lemon/lime. Enjoy!
